Trick or Treat Brownie Recipe

makes 8 brownies

Ingredients

¼ cup (56 g) unsalted butter
¼ cup (60 ml) vegetable oil
¾ cup (125 g) dark chocolate callets or a good-quality chocolate bar, coarsely chopped
2 Tbsp (17 g) cocoa powder
½ cup + 1 Tbsp (80 g) all- purpose flour
½ tsp salt
¼ tsp baking powder
¾ cup (150 g) sugar
¼ cup (50 g) brown sugar, packed
2 eggs
1 tsp vanilla extract
8–10 snack-sized chocolate bars, chopped into bite-sized chunks
¼ cup (45 g) Reese’s Peanut Butter Cups, M&M's, Snickers, Mars Bar, Kit Kat, Coffee Crisp, Hershey's Kisses, or Smarties, really the choices are endless!

Recipe

  1. Preheat your oven to 350°F. Prepare an 8 × 8-inch baking pan.
  2. Place the butter, oil, chocolate, and cocoa powder in a medium- sized heatproof bowl over a saucepan of simmering water, making sure the bottom is not touching the water. Heat, stirring occasionally, until the mixture is melted and smooth. Remove from the heat and set aside for 5 minutes to cool.
  3. Sift the flour, salt, and baking powder into a mixing bowl and set aside.
  4. Add both sugars to the butter/chocolate mixture. Mix to com-bine and then whisk in the eggs, followed by the vanilla. Fold in the dry ingredients, followed by the chopped-up chocolate bars (do not add the Smarties just yet).
  5. Bake for 12 minutes, remove from the oven, and sprinkle the Smarties evenly over top. Return to the oven and bake until the centre is set and the brownies are slightly pulling away from the edges of the pan, 12–15 minutes.
  6. Remove the pan from the oven and place on a cooling rack. Allow to cool completely before cutting.
