This particular dip does not necessarily have to be smooth. If you prefer a chunkier dip, just pulse gently or even mix everything together using a fork.INGREDIENTS
1 red bell pepper 2 long chillies with the seeds 3 cups good-quality feta ¼ tsp freshly ground white pepper ½ cup of ricotta ½ cup of olive oil 1 tbsp red wine vinegar salt (to taste) chilli flakes or chilli powder (to taste) olives and bread (to serve)RECIPE
- Preheat your griller and grill the bell pepper and the chillies until they blister. Peel them, and drain to remove excess liquid. Once drained, place them on paper towels.
- In your food processor, add the feta with the bell pepper, chillies, pepper and ricotta. Gradually add all the olive oil and vinegar until it is nice and smooth.
- Taste to see whether the dip needs any salt. This will depend on the flavour of the cheese.
- This dip is intended to be spicy, so if the chillies are not hot enough, add a few chilli flakes or a pinch of chilli powder.
- Serve in a bowl with olives and bread.
