Moscow Mule with Freshly Squeezed Rhubarb Juice Recipe

Rhubarb Mule
makes 1 serving
INGREDIENTS
Ice 1½ oz (45 mL) vodka
2 slices of cucumber
1 oz (30 mL) rhubarb juice (recipe below)
½ cup ginger beer
RECIPE
- Fill the glass 2/3 of the way with ice. Add vodka and cucumber.
- Add the rhubarb juice and stir. Top with ginger beer.
Recipe for Rhubarb Juice
INGREDIENTS
1 quart (1 L) jar
6 cups water
5 cups chopped rhubarb
2 vanilla pods
2¼ cups cane sugar
Lime juice (optional)
RECIPE
- Bring the water, rhubarb, and vanilla pods to a quick boil. Turn down the heat and let simmer for 10 minutes. Remove the pan from the heat and let sit for 30 minutes.
- Pour the juice through a strainer into another saucepan and add the sugar. Let it boil until the sugar is dissolved. Add lime juice (optional) and extra sugar to taste.
- Let the juice cool slightly before putting it in a hot glass bottle.* Store in the refrigerator.
- When serving, mix the juice with water at a ratio of 1 part juice to 3 parts water.
Note: The glass bottle can be rinsed first with sodium benzoate if you choose.
